This Standard sets out requirements for the design and operation of equipment, including control and recording instrumentation, used for continuous-flow pasteurization at temperatures between 60 C and 100 C of milk and other liquid dairy products.NOTE: A flow diagram of a typical pasteurizer installation is given in Figure 1 (see page 10). The principles illustrated apply to pasteurization systems with either plate-type or tubular-type heat exchangers.
