1.1The purpose of this guide is to discuss selecting and using methods that can be used to describe the sensory characteristics of products. It focuses specifically on the methods commonly referred to as rapid methods. This term will be used throughout this guide to describe these methods.

1.2The requirements, strengths, and limitations for each rapid method are explained and the rationale for the selection of a specific rapid method is provided. Descriptive-based and similarity-based rapid methods are both presented in this guide.

1.3Descriptive analysis (DA) is outside the scope of this guide; please refer to Ref (1)2 for guidance on this methodology.

1.4This guide will not explain in detail the methodology associated with each specific sensory test method, although helpful references to existing publications are included.
