Gives a method to determine acrylonitrile monomer in foods and food simulants. Applies to aqueous food simulants, to the fatty food simulant olive oil and to the approved alternatives sunflower oil and a mixture of synthetic triglycerides, as well as to liquid and solid foodstuffs such as soft margarine and beverages. The determined level of acrylonitrile monomer is expressed as milligrams of acrylonitrile per kilogram of food or food simulant. This is an appropriate method for the quantitative determination of acrylonitrile at a minimum level of 0,02 mg/kg in food or food simulants.
