Les liens éthyléniques des acides gras insaturés, présents dans un corps gras, donnent avec l'iode (et plus facilement avec le chlorure d'iode) des dérivés d'addition iodés (ou chloroiodés). La quantité fixée par les chaînes grasses est donc une méthode d'évaluation et l'insaturation globale d'un corps gras.
